Half-moon cookies

I love these cookies! They are so tiny and tasty that I’ve literally been eating them all day. My mom got this recipe from a friend of hers. My mom is also the one that made these cookies (and I’ve been the one eating them 😀 ).

What you need:

  • 1 egg yolk
  • 50 g icing sugar + some more to sprinkle
  • 1 tablespoon water, you can also use something with alcohol
  • 115 g ground almonds
  • 225 g butter, room temperature
  • 350 g flour

Put the egg yolk, icing sugar and the water in a bowl and mix it with a spoon or fork. Add the ground almonds and the soft butter and mix again. Then add the flour. Keep mixing until it crumbles, then shape them into half-moon shapes.

Preheat the oven til 175 degrees and bake the cookies 20 to 30 minutes. When you take them out of the oven they should be light brown and if you eat them they should taste done. When they’re still warm, sprinkle some more icing on the cookies. The cookies aren’t really sweet from themselves so be sure to add quite some sugar.   IMG_4582IMG_4545 IMG_4555 IMG_4558  IMG_4569
